Why offline, for Vietnamese
Vietnam gives you fast, cheap data in the cities and almost none where the trip gets good: the Ha Giang loop, night buses through the highlands, the back roads of the delta. Your eSIM drops the moment you leave the last town, usually right when you need directions or a bus time. On-device means the translator doesn't flinch: it works on the back of a motorbike, in a dead-zone homestay, wherever the road actually goes.
Vietnamese is written in the Latin alphabet, so the words look easy, right up until you try to say one. Six tones and stacked diacritics mean "ma" can be ghost, mother, rice seedling, or tomb depending on a mark you can't hear in your head. A translator that says the phrase out loud, word by word, is what keeps you from ordering the wrong thing at the wrong table.
Offline Vietnamese: Pocket Lingo vs. Google Translate
Google Translate can translate supported language pairs offline after their language packs are downloaded. Pocket Lingo takes a different approach: it requires no Studio AM account and translates with a compatible model on your device. Set up the model you need before traveling; the app then works in airplane mode without sending the translation to a Studio AM server.
