Why Popcorn Pops

A popcorn kernel is a seed with a secret. Under its hard shell sits soft white starch, and inside the starch hides a small drop of water.

Heat the kernel in a pan. The water gets hot and wants to become steam. Steam needs far more room than water, but the hard shell will not let it out. So the steam pushes. It pushes harder and harder, like air filling a balloon.

At last the shell cannot hold. It breaks open with a bang, the steam bursts free, and the starch puffs out and cools into a white cloud. A kernel with a cracked shell never pops. Its steam leaks out slowly, and there is no push.
